GU Stroopwafel with nut butter and berries

THERE’S MORE THAN ONE WAY TO STROOP A WAFFLE

Our friends at The Cyclist’s Menu* in Boulder, CO showed us that there’s more than one way to enjoy our new Energy Stroopwafels. While we think they taste plenty good on their own, these recipes definitely take things to a new level. Check them out, try them for yourself, and let us know what you think!

 

Nutty Wafel and Citrus Yogurt with Stroopwafel

The Nutty Wafel & Citrus Yogurt

Stroopwafel smeared with Peanut Butter n Oat’s, dipped in homemade lemon yogurt

Perfect for: Breakfast on a big workday or post workout snack!

Yields: 1 serving… maybe 2!

Ingredients:

  • 1 GU Energy Labs Stroop Wafel
  • 2 T Peanut Butter
  • 1/2 Cup Cooked or Raw, Rolled Oats
  • 1 Cup Plain Yogurt
  • Juice from 1/2 lemon + Zest


Procedure: 
Cooked oats are a great food item to have in the fridge. They hit the spot, warm and cold!!

  • Mix oats and peanut butter together for a thick smear.
  • Cut Stroop Wafel in half, keeping 1 piece in tact and the other diced into small pieces.
  • Place 1 cup of yogurt into a ball jar or desired bowl. Squeeze in lemon juice & add zest. Mixed around until combined.
  • Smear peanut butter n oats onto 1/2 Stroop Wafel, dip into yogurt, and sprinkle with chopped waffle and oats.

Taters & Cream

Sweet potato, cold brew & banana ice cream

Perfect for: Post workout, mid-afternoon snack, dessert, kids b-day party treats

Yields: +/- 6 servings (depending on scoop), 1 Stroopwafel per serving

Ingredients:

  • GU Energy Labs Stroop Wafel(s)
  • 1 Sweet Potato
  • 2 Frozen Banana’s
  • 1/2 Cup Almond Milk
  • 1/4-1/2 Cup Cold Brew Coffee (we recommend HOTBOX Roasters)
  • 1/2 T Cardamom


Procedure: 
Sweet potatoes are great anytime of day. Think about cooking one or two on Sunday, and having it in the fridge for this recipe or any other during your busy week. Skin the potato and place in oven at 400 degrees for one hour (time may vary with change in elevation).

  • Place all of your ingredients in a food processor or blender, churn until smooth and creamy.
  • Place in the freezer for 1-1.5 hours, depending on desired consistency.
  • When you’re ready to eat this yummy treat, place GU Stroop Wafel in oven or toaster at 350 degrees for 5 minutes.
  • Fold your wafle into a mini cone, scoop Taters & Cream inside the cone, add some mint & ground coffee beans for garnish & enjoy!

Potassium on Ice

Frozen banana, dipped in chocolate & rolled in minced Stroopwafel dust

Perfect for: Breakfast on the run, post exercise, Afternoon snack, dessert

Yields: 1 Banana Snack

Ingredients:

  • 1 banana
  • 1 Cup of your favorite chocolate chips
  • 1 GU Energy Stroopwafel

 

Procedure: Temper your chocolate: On the stove top, boil water (2-3 cups) in a pot. Choose a metal mixing bowl and as water begins to boil, place bowl on top of pot with chocolate chips inside. Use a plastic spatula and mix chips as they melt into fine chocolate!

  • When fully melted, dip banana in chocolate and place on parchment paper.
  • In food processor or with a knife, chop your desired Stroopwafel flavor and sprinkle on top of warm chocolate.
  • Place in freezer for 1-1.5 hours…
